S’more Bars are the ultimate chewy gooey bar. Not quite cookie, not quite cake. All kinds of delicious. No campfire needed!

Whenever Summer rolls around (or a cold winter day when I’m longing for summer) I get a s’more craving. The graham, the chocolate, the mallow. Gahhh it is allso good. It’s one dessert that brings back all kinds of childhood memories of campfires and watching the Sandlot over and over of course.

For this recipe, I decided take all of the childhood nostalgia of S’mores and put them into one delectable ooey, gooey, chewy bar. There is a chocolate graham cookie layer, a layer of chocolate candy and a top layer of gooey marshmallows broiled to perfection.

My kiddo took one bite and said “Mama, this isn’t good….THIS IS AMAZING.” He wasn’t wrong! But don’t just take our word for it, you’ve got to try them yourselves. And today I’m showing you how.

What ingredients do you need to make S’more Bars?

These are a lot like your traditional cookie bar so you’ll find a lot of ingredients that you’d find in them: Flour, granulated sugar, brown sugar, baking soda, salt, eggs, vanilla extract and cocoa powder.

This s’mores bar recipe has a couple other ingredients to give us that classic s’mores taste.

GRAHAM CRACKERS: Instead of doing a layer of graham crackers like some s’more bar recipes, I wanted to add even more chocolate to the mix. So this recipe has a chocolaty cookie layer with graham crackers mixed in. You want to break them up into pieces but don’t make them into fine grounds. You still want pieces of graham cracker throughout the bar.

DARK CHOCOLATE CHUNKS: I used the Private Selection Dark Chocolate Chunks from my local Fred Meyer (Kroger store). If you don’t like dark chocolate you can use semi-sweet instead.

MINI MARSHMALLOWS: It’s not a s’mores recipe without marshmallows!

Making s’mores bars is pretty straight forward but I’ve included step by step photos and instructions here to help ensure yours turn out perfect!

  • STEP #1: Beat together butter, granulated sugar and brown sugar together until fluffy. Beat in eggs one at a time. Beat in vanilla.
  • STEP #2: In another bowl combine flour, baking soda, salt and cocoa powder. Slowly add dry ingredients to wet ingredients. Beat in milk. Fold in graham crackers. Batter will be thick and sticky.
  • STEP #3: Press batter into the prepared baking pan. Sprinkle dark chocolate chunks in a single layer over the top. Bake in preheated oven for 15 minutes.
  • STEP #4: Remove from oven. Top with marshmallows. Bake for an additional 5 minutes, turn on the broiler and broil for 30 seconds – 1 minute or until marshmallows brown slightly. Allow to cool before cutting.

Storing s’more bars:

You’ll want to store these covered on the counter. They will be freshest for a few days. And a 10 second warm up in the microwave will also give them the perfect gooey chocolaty bite.

The hardest part about this S’more Bars Recipe is trying to decide what your favorite layer is. The chocolaty graham layer, the melty chocolate candy layer or the marshmallow layer.

Ingredients

Ingredients:

  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 1/4 cup all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup cocoa powder
  • 1/4 cup whole milk
  • 1 cup crushed graham crackers not super fine you still want chunks
  • 2 cups dark chocolate chunks
  • 4 1/2 cups mini marshmallows

Instructions

  • Preheat oven to 350 degrees. Grease and flour a 9 x 13 baking dish.

  • Beat together butter, granulated sugar and brown sugar together until fluffy. Beat in eggs one at a time. Beat in vanilla.

  • In another bowl combine flour, baking soda, salt and cocoa powder. Slowly add dry ingredients to wet ingredients. Beat in milk. Fold in graham crackers. Batter will be thick and sticky.

  • Press batter into the prepared baking pan. Sprinkle dark chocolate chunks in a single layer over the top. Bake in preheated oven for 15 minutes. Remove from oven. Top with marshmallows. Bake for an additional 5 minutes, turn on the broiler and broil for 30 seconds - 1 minute or until marshmallows brown slightly.

  • Allow to cool, slice and serve.

Notes

The batter for the bottom layer is very thick and sticky. Use a rubber spatula to spread it into the pan. You can also spray your fingers with non-stick spray and use your hands if you like.

Marshmallows can burn really quickly under the broiler, keep an eye on them.

After baking the marshmallows are pretty sticky, and might stick to your knife when cutting. I found it easiest to cut using a knife that I ran under hot water.
