Well, it’s been a WHOLE year since I first started this foodie venture into the blogosphere, so what better way to celebrate my blog’s “birthaversary” than something birthday cake-inspired!

There’s nothing that excites me more than hearing the words Funfetti or Cake Batter in a recipe title.

Seriously.

Nothing.

If I could, I would down an entire glass of cake batter (topped with a generous dose of pretty colorful sprinkles!) every morning for breakfast if it were socially acceptable. Unfortunately for me, we don’t live in Willy Wonka’s world…

Luckily, we DOlive in a world where it’s ok to be a few years older than 6 (27 to be exact…) and obsessed–even a bit neurotic–when it comes to anything that involvessprinkles, cake batter, or birthday cake.

So, without further ado, I bring you one of the most magical treats of BaJillian Land…

Birthday Cake Oreo Truffle Blondies!

No, you’re not seeing triple…there are, in fact, THREE layers of delicious, sinfully sweet goodness in this treat.

It starts with a chewy, dense, butteryblondie flavored with the wonderful childhood decadence of cake batter. With sprinkles, of course!

Follow that up with a thick truffle layer made of a super simple mixture of Oreo’s best flavor to date…

Oh, and MOREsprinkles!

And because I don’t consider a cake a birthday cake if it doesn’t have any frosting (you shouldn’t either!), I added a sweet and creamy, deliciously tangy finale of cream cheese frosting. And just for good measure (as well as prettiness’ sake), MORE sprinkles on top!

Now before you prematurely close this window (after drooling over every picture first), assuming that this childhood dream of wonderfullness will take forever to make due to it’s THREE layers, I implore you to read the recipe first. (See how smart and persuasive I sound when I use words, like implore?)

You might be surprised at how simple this recipe really is to make. First off, the bottom/blondie layer uses a cake mix. Yes, it ISpossible to create un unbelievably chewy and dense blondie out of a typical boxed yellow cake mix!

Secondly, as I mentioned earlier, the “truffle” layer is just a simple (yet Heaven-on-Earth) mixture of crushed up Oreos and cream cheese. Along with a few–ahem, A LOT–of sprinkles added in.

Lastly, the cream cheese frosting couldn’t be any simpler to whip up. That is, of course, unless if you scoopedit out of the Pillsbury can…but who wants canned frosting when it’s so flippin’ easy to make at home? All you need is 1/2 cup of butter, 1/2 cup of cream cheese, 1/2 cup of powdered sugar, 1/2 teaspoon vanilla, and a dash of salt. See? I even made the measurements easy for you to remember.

So now you have absolutely NO excuse NOT to make these blondies!

Ingredients

For the Blondie Layer

  • 1 box yellow cake mix (I used Duncan Hines)
  • ½ cup sprinkles
  • cup vegetable oil
  • ¼ cup milk
  • 1 large egg

For the Truffle Layer

  • 1 (15.25 oz) Golden Birthday Cake-Flavored Oreos
  • 6 ounces cream cheese softened
  • ¼ cup sprinkles

For the Cream Cheese Frosting

  • ½ cup unsalted butter softened
  • 4 ounces cream cheese
  • ½ cup powdered sugar
  • ½ teaspoon vanilla
  • Pinch of salt
  • Sprinkles for decorating

Instructions

  • Preheat oven to 350ºF and spray an 8x8 inch square dish with nonstick cooking spray.

  • In a large mixing bowl, combine the cake mix and sprinkles. Add the oil, milk, and egg, and stir until thick batter forms.

  • Pour batter into prepared pan and bake in the oven for 25-28 minutes, or until edges are slightly golden. Allow to cool completely.

  • In a food processor, process Oreos into fine crumbs. Add the cream cheese and process until fully incorporated. Stir in sprinkles.*

  • Using the back of a spatula or your fingers, press Oreo truffle mixture into an even layer on top of the cooled blondies.

  • In a stand mixer fitted with a paddle attachment, mix the butter and cream cheese together until smooth and fully blended. Add the powdered sugar, vanilla, and salt and mix until just combined.

  • Spread cream cheese frosting evenly on top of the Oreo truffle layer. Add sprinkles. Cut into squares and serve! Blondies will stay fresh wrapped in plastic wrap or covered in an airtight container for up to 1 week in the refrigerator.

Notes

*If you don't have a food processor, you can crush the Oreos in a large zip-top bag with a rolling pin. Once evenly crushed, pour Oreo crumbs into a large bowl and stir the cream cheese and sprinkles in with a spoon until well-blended.
